However, if they added a component that did not degrade with heat (thermostable), fermentation was reactivated. They initially called this heat-stable factor “coferment”. Glutathione
Unlike other components discovered in humans, glutathione was first identified in microorganisms:
1888: French scientist J. de Rey-Pailhade was the first to isolate this substance from yeast and other animal tissues. He initially named it “philothion” (from the Greek philos, meaning love, and theion, meaning sulfur), due to its high affinity for and content of sulfur.
1921: Sir Frederick Gowland Hopkins, a prominent British biochemist, rediscovered the molecule and gave it the name we know today: Glutathione. Hopkins demonstrated that it was a tripeptide (a chain of three amino acids) essential for cellular metabolism.
1935: Finally, the exact chemical structure (composed of the amino acids cysteine, glutamic acid, and glycine) was confirmed by chemist Sydney Gabriel.
